Salmon with Roasted Vegetables
A juicy salmon fillet paired with seasonal oven-roasted vegetables, simple and flavorful.

Ingredients
1 fresh salmon fillet (180g)
200g sweet potato
150g zucchini
100g red bell pepper
100g broccoli florets
2 tablespoons olive oil
1 lemon
2 garlic cloves
Fresh thyme, salt and pepper
Instructions

Preheat the oven to 200°C (400°F).

Cut the sweet potato into cubes, the zucchini into rounds and the bell pepper into strips. Mince the garlic.

Spread the vegetables on a baking sheet, drizzle with olive oil, add garlic and thyme. Season with salt and pepper and roast for 15 minutes.

Season the salmon with salt, pepper and lemon juice.

After 15 minutes, place the salmon on the baking sheet with the vegetables and roast for an additional 12 to 15 minutes.

Serve the salmon on a bed of roasted vegetables with a squeeze of fresh lemon.
