Ingredients
1 ripe banana
2 eggs
30g vanilla whey protein
40g rolled oats
1 teaspoon baking powder
1 pinch of cinnamon
Coconut oil for cooking
Instructions
1Mash the banana with a fork in a bowl, then add the eggs and whisk vigorously.
2Fold in the whey protein, rolled oats, baking powder and cinnamon. Mix until the batter is smooth.
3Heat a non-stick pan over medium heat with a drizzle of coconut oil.
4Pour about 2 tablespoons of batter per pancake. Cook for 2 minutes until bubbles form on the surface, then flip and cook for 1 minute on the other side.
5Serve the pancakes stacked with fresh fruit, a drizzle of honey or a spoonful of peanut butter.
