Ingredients
150g chicken breast
80g uncooked quinoa
100g broccoli florets
1 ripe avocado
50g roasted chickpeas
1 tablespoon olive oil
1 tablespoon soy sauce
Sesame seeds and fresh cilantro
Instructions
1Cook the quinoa according to package directions and let it cool slightly.
2Season the chicken with salt, pepper and a drizzle of olive oil, then grill over high heat for 5 to 6 minutes on each side.
3Steam the broccoli for 4 minutes so it stays crisp-tender.
4Slice the chicken and cut the avocado into thin strips.
5Assemble the bowl: quinoa as the base, topped with chicken, broccoli, avocado and chickpeas. Drizzle with soy sauce and sprinkle with sesame seeds and cilantro.
